As mentioned in my previous post...I am committed to try to cook more. Over the New Years holiday I picked up REAL SIMPLE magazine and found this recipe for Kale and White bean soup. It was easy to make and I have plenty left over...like a whole quart in the freezer!! I did not buy the farm bread like it suggests. I had my favorite muffins in the fridge. Threw that in the toaster and but some butter on it. Perfect meal. Though if my husband were helping me...I would have had some grilled garlic bread to dip in the soup.
