Soooo in my ongoing search for snack foods I found these at whole foods.
Somersaults are made with sunflower seeds and other grains.
Crunchy and delicious. They pack some serious protein and fiber.
Honestly, I have only tasted the sea salt flavor but they have an assortment of others like salty pepper and a sweet one with dutch cocoa.
Look at their website for a store locator or you can always find them online.
Stay healthy and snack all you want!

Almond JOY!!!
Went to the Santa Monica Farmer's market this morning. My husband goes to many of the markets in town but Wednesday's Santa Monica market is pretty much the cream of the crop. I would say 90% of the vendors offer Organic produce. It really is a bounty of all things beautiful in California.
Vinny usually surprises me with some sort of goody from the market. He got me hooked on this fresh almond butter with honey. I spotted the vendor today and went to checkout what else they had to offer. Fat Uncle Farms sells all things ALMONDS. They had the best blistered almonds in a bunch of fabulous flavors. After almost overdosing on the samples I decided on Garlic&Herb and a bag of Cinnamon.
They are a small operation only serving California markets. Their website site has a link to recipes like the almond filled chocolate cups above and almond crust for tarts. People outside LA...not to worry they do have an online store. I am sure you could call them and ask to ship stuff to you too.

Pop your Corn

I love making popcorn. I wish I had a fancy home theater that that housed my own machine. Fresh air popped popcorn and real butter?!!! The best. I grew up with a big green bowl filled air popped corn and real melted butter (thanks Dad). Some movie theaters still do it. To find one is a real score.
But, at this point I like making in the kitchen. Currently, I pop this corn and take it to the movies in a plastic zip lock bag. Seriously, I am that person. Don't get me wrong I still eat cheap movie popcorn and scary yellow butter. But, sometimes I make the time to do my own pop. No real butter...just plain as Jane popcorn with salt.
Here is my lose interpretation of a recipe for what could serve 4.....I think.
ORGANIC POPCORN WITH SALT
One pot with handle and lid
2 tablespoon of grapeseed oil
(need to coat bottom of the pot)
3 cups of organic popcorn
few pinches of good Maladon or sea salt
Stove burner should be on high setting. Coat bottom of the pot with grapeseed oil. Pick up pot and move the oil around. It should slide across the bottom.
That is when you know it is hot and ready for the kernels.
Put kernels in and then cover with lid leaving it slightly open on top. This allows some air to escape. You must not go to far from the stove. The key to not burning the kernels is to wait until you hear the popping sound slow down to like one or two pops in a minute. Then take pot off stove(be careful the handle will be hot. Use towel or oven mitt). Pour popcorn in a big bowl.
At first sprinkle small amount of salt on popcorn, then taste. Mix corn and put more salt on if desired.

Easy Eating

As mentioned in my previous post...I am committed to try to cook more. Over the New Years holiday I picked up REAL SIMPLE magazine and found this recipe for Kale and White bean soup. It was easy to make and I have plenty left over...like a whole quart in the freezer!! I did not buy the farm bread like it suggests. I had my favorite muffins in the fridge. Threw that in the toaster and but some butter on it. Perfect meal. Though if my husband were helping me...I would have had some grilled garlic bread to dip in the soup.
